Ladies and Gentlemen, please welcome Guest Chef Stephanie! She recently had some peeps over for dinner and served a delicious chicken marsala. She very kindly agreed to share her recipe:
Buy some chicken. I've used both breasts and tenders. Also buy butter, marsala wine, chicken broth, mushrooms and a packet of brown gravy. Also make sure you have flour, salt, pepper and olive oil.
Take your chicken and cut it up into bite size pieces. In a bowl mix some flour, salt and pepper. Coat each peice of chicken and put aside. When finished, heat a big pan and drop in butter and olive oil. Brown all pieces of chicken. Add more butter/oil when necessary.
When all chicken is brown, pour some marsala wine into the pan to loosen up all the tasty little burned up pieces. yummy! Next add in the mushrooms, more butter and a bit of chicken broth. Stir mushrooms until they are soft. Next add in about a can of chicken broth, about 1/2 of the gravy packet and more marsala. This is the gravy. If the gravy seems to thick or if you want more, just add more broth, gravy mix and marsala. When smooth, add in the chicken back in. Cook at a low simmer for about 1/2 hour. I've left it cooking on very low for a very long time and it is still good...maybe even better.
Surround with peas and eat!
